this one is easy and
oh so comforting

“No Peek” Stew

Ingredients

  • 1 pound beef stew meat (cut in 1” pieces)
  • 4-5 stalks celery (cut in diagonal chunks)
  • 3-5 carrots (cut in diagonal chunks)
  • 1 large onion (cut in chunks)
  • 2 potatoes OR 1 can of potatoes (cut in chunks)
  • 1 can beef broth
  • 2 cans tomatoes (undrained, chopped or diced)
  • 6 T. flour
  • 2 t. sugar

Directions

  1. Preheat oven to 300 degrees.  Stir everything together in roasting pan or pot; cover tightly.
  2. Bake 4 hours – no peeking!!

Serve with biscuits or crusty bread – yummy! 

Makes 4-6 servings.
