Thanksgiving is just around the corner –

let’s melt those love handles away with some

(Almost) Zero Point Soup

Ingredients

  • 1 Large Onion (chopped)

  • 3 Stalks Celery (chopped)

  • 3 Carrots (chopped)

  • Garlic (to taste)

     

  • 1/2 Head Cabbage (chopped)

  • Seasonings (Italian, Creole, Mrs. Dash – your preference)

     

  • 3 Cans (or so) Chicken or Vegetable Broth

  • 1 Can Diced Tomatoes (undrained)

  • 1 Can Corn (drained OR 1 c. frozen)

  • 1 Can Green Beans (drained OR 1 c. frozen)

Directions

  1. Lightly coat a large soup pot or wok with olive oil.
  2. Add the onion, celery, carrots, and garlic. Cook for 4-5 minutes until the onion begins to become translucent. If veggies begin to burn at all, add a few tablespoons of water or broth.
  3. Add the cabbage and seasonings. Stir and cook for 5 minutes.
  4. Add the broth and canned tomatoes.
  5. Bring to a simmer and cook for about 10 minutes until the cabbage is just tender.
  6. Stir in the corn and green beans. Cook for 2-3 minutes until warmed through.
